The majority of our Lamb comes from Hawstead Farm, Hursley. We choose the lamb we think we will need, when the lambs are separated from the ewes. This means that the flavour of the lamb will change during the year. STarting with young lamb during the spring with its sweet subtle flavour, and ending with rich, robust Hogget in the winter months.
Do you know what a Hogget is? A: A lamb turns into Hogget between 11 – 24 months old. Anything over 24 months is then referred to as Mutton.
