The king of roasting joints – a truly magnificent centrepiece!

If you’re looking for something really special to bring to the table, our 40 Day Dry Aged English Forerib of Beef is hard to beat.

One of our personal favourites here at The Farmers Butcher, this magnificent roasting joint is full of rich, deep beef flavour and beautifully tender. It’s the sort of joint that deserves a little ceremony when it’s brought to the table for carving!

Cut from the forequarter, the forerib has wonderful natural marbling running through the meat. As it cooks, this marbling helps keep the beef beautifully succulent, delivering exceptional flavour in every slice.

Traditionally dry-aged for 40 days, our English beef develops an incredible depth of flavour and tenderness. We source our beef from local farms wherever possible, supporting English farmers and bringing you quality meat with provenance you can trust.

Expertly boned and rolled by our butchers, it’s ready for roasting and makes a spectacular centrepiece for a Sunday lunch, family celebration or special occasion.

Cooking Tips

A joint this special deserves to be cooked with care, but there’s no need to overcomplicate things.

  1. Remove the beef from the fridge for a short while before cooking.
  2. Season generously with sea salt and freshly ground black pepper.
  3. Start in a hot oven to develop a lovely crust, then reduce the temperature to finish roasting more gently.
  4. Use a meat thermometer to check when the centre reaches your preferred temperature.
  5. Allow the joint to rest well before carving, so the juices settle and the meat stays beautifully succulent.

Our tip: Serve with proper roast potatoes, Yorkshire puddings, seasonal vegetables and a rich beef gravy. Sometimes the classics really are the best!

Storage

Keep refrigerated below 5°C. Suitable for home freezing.

Why Do We Dry-Age Our Beef?

At The Farmers Butcher, we believe great beef deserves time.

Our beef is traditionally dry-aged in a carefully controlled environment, allowing natural enzymes to gradually break down the muscle fibres, improving tenderness and developing a richer, deeper flavour.

During this process, the beef also loses some of its moisture, concentrating the flavour and creating a firmer texture. This helps the meat brown beautifully when cooked.

It's a time-honoured process that takes patience, but we think the results speak for themselves.

It's one of the key differences between our beef and the beef you'll typically find on supermarket shelves.
