Top tips for perfect crackling;
- use good quality meat, ours is perfect!
- bring your meat to room temperature before it goes in the oven,
- make sure the skin is dry, you can add salt if you wish, this will enhance the flavour, but doesn’t make the crackling any better, so not absolutely necessary.
- cook at 180 degrees, for 20 mins per pound, plus 20 mins. (middle of the oven is better)
