Sarah’s Cassoulet Recipe
Serves 4
Ingredients
- 2 x Large Onions – roughly chopped
- 2 x Carrots – peeled & diced
- 6 Sausages – any flavour (I use Iron Age)
- 150g Smoked bacon lardons
- 400g Chopped tomatoes
- 400g Mixed bean salad
- Good splash of decent ketchup (eg Tracklements Spicy Tomato)
- Handful herbs de provence (or any other herbs)
- 1 x Tablespoon rapeseed oil
Method
- Cook the sausages as normal, eg in oven or fry, then cut each into three.
- Heat the rapeseed oil in a large heavy bottomed pan, sauté the onions and carrots, when soft add the bacon.
- Stir for a few minutes, then add the rest of the ingredients. Simmer for about 30 minutes – careful it doesn’t stick, keep stirring regularly. Check seasoning – a splash of wine or cider or balsamic vinegar can be added.
- It probably won’t need salt due to the bacon.
So easy, and delicious.
